Asian inspired Chicken Salad Bowl or what I like to call as Salad Terjun A quick understanding with the word “ Terjun ”. It means, Jump in Malay. I like to use it because I don’t have a recipe to follow. I literally use what I have, can find and think I can add-in to make the meal complete. So, it is safe to say, I used Terjun recipe a lot. This particular salad is perfect for when you want to clean off your veges leftover in your fridge. The other night, both me and my husband want to have something easy, quick and simple. First thing came to our head is Burger King or Take Away Kebab Pizza. But, neither of them what we would want to eat. So, I went and look into our fridge. Everything is leftover. My first thought was to make fried rice. But I don’t feel like eating rice. I took out all the leftover and thought of salad with Asian twist. Nasi Goreng / Fried Rice

 

 

Nasi goreng! When my homesick is at the highest level, Nasi Goreng is my go to meal to have. It is cheapest and easiest to cook. What more homie that fried rice for any Asian living abroad?

Today, that is what i had for my lunch. It is super simple to do. I bet you have what you need in your kitchen to make Nasi Goreng. Well, unless you don't have rice in your pantry. There is no a must have ingredient ( but rice) for Nasi Goreng. Add what you have and what you like.
Since i have not done any groceries shopping for a week, so i have only a tiny piece of everything which i chopped and diced for my Nasi Goreng.

Here what i have for my Nasi Goreng.

A bowl of leftover rice.
Half medium size yellow onion. Chopped.
1 garlic. Chopped.
Green peas. ( Leftover. I think it was less than half a cup.)
1 Small Carrot. Diced. (Leftover from yesterdays cooking)
Green paprika. ( Diced. Also a leftover from yesterdays cooking.)
Oil for stir fry.
Light Soya ( to taste)
Kicap Manis / sweet soya ( to taste)

*Noticed i did not add salt. Because the soya will make it salty.

How to?
  1. Fry onion and garlic until aromatic.
  2. Add rice and keep stirring.
  3. Add light soya and Kicap manis. Stir more.
  4. Since i prefer my veges still have that crunch, i added them last. Keep stirring until everthing is coated with the soy.

You have to remember to have high heat at all times. So a good wok is a must for Asian cooking.
